Calibre is the key indicator for professional buyers: it determines the number of fruits per kilogram and the optimal use for each service type.
- Calibre 12/14 (Kalamata, Atalante): dense flesh, intense aromatic profile — ideal for hot cooking (tagines, pizzas, braised dishes) and house tapenade.
- Calibre 14/16: versatile, suitable for aperitif tray service and cooking. Best throughput/presentation balance for medium-volume restaurants.
- Calibre 19/21 (Lucque, Halkidiki): premium service olive, firm flesh, strong counter presence. Standard for luxury hotels and cocktail bars.
- Calibre 22/25 (Coquillos, Picholine): large olive, ideal for sealed tray resale or premium cheese boards.
Storage and B2B logistics
Brined table olives should be stored between 4 °C and 8 °C, lid closed. Once opened, use within 10 to 15 days in restaurant service to preserve organoleptic quality. Tapenades and spreads should also be stored between 4 °C and 8 °C and used within 5 to 7 days after opening. The best-before date is marked on each bucket or tray — record it in your food safety management plan (PMS).
Azur buckets (3, 5, 10 kg) and Safaa packs (6×280 g, 8 kg) can be palletised directly without additional overpackaging, simplifying reception in a warehouse or restaurant storeroom. Deliveries are made franco, subject to thresholds confirmed on validated professional accounts (SIRET required).
