Hibiscus is harvested at maturity, when the calyces reach their deep red color and maximum concentration of organic acids. Carefully dried to preserve its floral aroma and characteristic tangy acidity, it is part of the Espig range of aromatic herbs selected for demanding professional use.
In foodservice (CHR) kitchens, the cut flowers are infused in homemade syrups for cocktails and mocktails, where they provide a natural carmine hue without added coloring.
