Pistachio Cream - 6x200g

Proposal for a recipe:

Dubai chocolate with kadaïf and pistachio cream

A gourmet recipe inspired by Dubai's flavors, combining Kadaïf's crunch, the sweetness of chocolate and the richness of the pistachio cream.

Ingredients:

For chocolate:
  • 200 g dark chocolate or good quality milk

  • 20 g cocoa butter (or normal butter)

  • 1 tbsp. Rosewater coffee (optional)

  • 1/2 c. Coffee Cardamom Cardamom

For the crisp kadaïf:
  • 50 g angel hair (Kadaïf)

  • 20 g melted butter

  • 1 tbsp. Honey or date syrup soup

For pistachio cream:
  • 100 g of non-salty pistachios

  • 2 c. honey-soup

  • 1 tbsp. Neutral oil (sunflower or coconut)

  • 2 c. Sweet concentrated milk


Preparation:

1️⃣ Prepare crisp kadaïf

  1. Preheat the oven to 180 ° C.

  2. Mix kadaïf with melted butter and honey.

  3. Spread on a plate covered with parchment paper and bake 10-15 min until it is golden and crisp.

2️⃣ Pistachio

  1. Mix the pistachios until a fine powder.

  2. Add honey, oil and concentrated milk. Mix until you get a smooth cream.

3️⃣ Melt the chocolate

  1. Break the chocolate and make it melt in a bain-marie with cocoa butter.

  2. Incorporate rose water and cardamom. Mix well.

4️⃣ Assemble

  1. In silicone molds, pour a thin layer of melted chocolate.

  2. Add a spoon of pistachio cream and a little crispy Kadaïf.

  3. Cover with chocolate and smooth the surface.

  4. Refrigerate for 2 hours before unmolding.

A chocolate with a melting heart, crisp and fragrant ... an oriental delight!
