Dubai chocolate with kadaïf and pistachio cream
A gourmet recipe inspired by Dubai's flavors, combining Kadaïf's crunch, the sweetness of chocolate and the richness of the pistachio cream.
Ingredients:
For chocolate:

200 g dark chocolate or good quality milk

20 g cocoa butter (or normal butter)

1 tbsp. Rosewater coffee (optional)

1/2 c. Coffee Cardamom Cardamom
For the crisp kadaïf:

50 g angel hair (Kadaïf)

20 g melted butter
-
1 tbsp. Honey or date syrup soup
For pistachio cream:

Preparation:
1️⃣ Prepare crisp kadaïf

Preheat the oven to 180 ° C.

Mix kadaïf with melted butter and honey.

Spread on a plate covered with parchment paper and bake 10-15 min until it is golden and crisp.
2️⃣ Pistachio

Mix the pistachios until a fine powder.

Add honey, oil and concentrated milk. Mix until you get a smooth cream.
3️⃣ Melt the chocolate

Break the chocolate and make it melt in a bain-marie with cocoa butter.

Incorporate rose water and cardamom. Mix well.
4️⃣ Assemble

In silicone molds, pour a thin layer of melted chocolate.

Add a spoon of pistachio cream and a little crispy Kadaïf.

Cover with chocolate and smooth the surface.

Refrigerate for 2 hours before unmolding.
